Hey Amber. You first need to decide wether you want to ski or snowboard. Very different things. You will have no problem finding instructors in any ski resort, with or without appointment.
I would recomment starting with a professional instructor to get the basis right. I remember that the European Snowsport school based in Verbier offers free lessons in the first weekend of the season, that's always good to have.

There is the ski club international de Geneve for skiing. For snowboarding try mont snow boarding in Morzine (Tammy Esten>) closer and probably cheaper than Verbier. Check their website to see if they do beginners

Late November should be already fine, but that depends on the year.
and deifnitely check your insurance if it covers ski accidents. If you will be employed in CH that will be covered, in other case make sure you have appropriate coverage:)
