To be fair - I have only good experiences with swisscom. Great customer service, amazing cover and quite a couple of subscriptions. Downside... Quite expensive compared to the surrounding countries.

Actually the subject is very obscure: do you want just to undergo in a bar discussion like discussing what's better between brunettes, blondes and red haired girls, or do you want advices about what to subscribe for yourself ?
In this second case you should first of all provide some information on your needs: are you looking for customer care, network coverage, customer base, shops quantity, low prices or what else ?
The "best company" doesn't exist: everyone has his/her own best company, that's the one that better fits their needs!

- I don't use internet on the phone
- I'm an infrequente/average user
- I call all kinds of numbers and networks
- network coverage is very important because I live near the boarder with France and I'm on Roaming everytime I'm home (maybe because the french signal is stronger than the swiss Ortel one)

I live in Zurich, then I don't have a clue about the specific situation in Geneva (closeness to the border etc ...), but the usual assumption in Switzerland is: best network coverage -> Swisscom.
But, in my opinion, this wouldn't prevent you from finding yourself connected from time to time to a French network. The solution for this is in the phone and it's called: "manual network setting" (or something like that); you should just go there and choose the Swiss mobile network of your SIM card: the phone will stay stick to that network.
The disadvantage is that the phone will try to stay stick to that network even when there isn't any network coverage (i.e. abroad), thne you should remember to change the network settings each time you go abroad and then come back.
Looking at your "customer profile" this shouldn't be a big issue for you.
