Senorita Chiquita, if you're in a rush to get the recipe, get in touch with Laurent01 :)
so is foie gras a popular new year's dish?

It's not a recipe of foie gras poêlé, but it^s easier!
Turn on the grill of your oven (max)
Cut the foie gras in slices of 2cm
lay them on a slice of white toast bread
salt, pepper, a dash of cognac
put them under the grill (10-15cm) until the bread is golden brown
eat immediately
If you want to make them "poêlé", season & flour them before putting them in a hot pan with no oil, about 1 mn per side, depending on the thickness of the slices. Be sure to put enough salt and pepper. Remove the foie gras, put it in a warm plate covered with an aluminium foil, deglaze the pan with balsamic vinegar, add stock, reduce 2/3 until it becomes thick. Put the sauce in a plate, the foie gras over it and sprinkle a bit fleur de sel just before serving.
