Many do--you just have to get it expressly in writing from the company that it will cover a dispute that may only be litigated before the ILOAT of UNDT/UNAT.
The ones the absolutely offer such coverage are, even when you are the claimant:

In several cases, I know that Touring Club Suisse (Assista--full coverage, not just the traffic policy) has covered such claims, but need get it in writing in advance. If the general conditions say that it only covers claims that can be brought before the Swiss tribunals, that means it does NOT cover claims in the ILOAT/UNAT system, unless the company expressly agrees in writing otherwise. Generalli also offers reasonable legal insurance but not sure if it covers IO employment claims.
Bottom line is that anyone living in Switzerland should have a legal insurance policy whether you work for an international organisation or not--if you screw up, or have a fender bender or a scrape with your neighbor, you quickly find yourself in a powerful and expensive legal vice--as the minimum hourly rate for lawyers in Geneva is CHF 400, and as such policies cost between CHF 250-400 a year, its a no brainer. This is also true because when you sue or get sued in Switzerland, the loser pays the other side's legal fees--such insurance policies also cover that exposure as well. And you can't buy it once the claim arrives!!
