Some Superfood Recipes

Here are some great superfood recipes!  Please feel free to share some of your own great recipes!


Seed and Watercress Salad Orange, Pumpkin


A large bunch of watercress, 2 large oranges, 2 tbs of pumpkin seeds, 2 tbs fresh parsley, 2 tbs olive oil and 2 tbs of lemon juice.


Wash and trim the watercress and thoroughly dry before putting in a salad bowl. Toast the seeds lightly in a pan over a moderate heat and set aside until cool. Meanwhile make your dressing by mixing together the oil, lemon juice and some finely grated orange rind. Peel both oranges and remove the pith. Cut into segments and add to the watercress. Sprinkle over the seeds and parsley and mix with the dressing just before serving.


Avocado, watercress and pine kernel salad


1 large bunch of watercress, 2 avocados, 2oz of pine nuts, 2 tbs of walnut oil, juice of half a lemon.


Wash and dry the watercress and trim off any straggly bits. Place in a bowl with the sliced avocado and pine nuts (you can toast the pine nuts in a pan beforehand if you like). Make the dressing by mixing the oil, lemon juice and some salt and pepper. Mix all ingredients together and cover with a cloth and leave to rest for an hour before serving.


Exotic fruit crudites with creamy grapefruit dip


A selection of exotic fruits, 175 g of ricotta or low fat cottage cheese,1 pink grapefruit.


Select a wide variety of different fruits and peel and chop to serve. For the dip, simply squeeze the juice out of the grapefruit and whip it into the cheese in your processor. Add a pinch of ground pepper for to taste.


Grilled Salmon with Green sauce


2 Salmon steaks, 1 clove of garlic, lemon juice, 2tbs of pine nuts, a bunch of fresh parsley, a bunch of fresh basil, 175 g of olive oil.


Put all the ingredients for the sauce in the processor and whizz up into a smooth consistency. Season and oil the steaks and grill on a bbq, in the oven or pan fry. Serve the fish with the sauce along with a few potatoes or some brown rice.


Ginger Lamb stir fry


375 g of lamb, 2 tbs of sherry, 4 tbs of soya sauce,1/2 tbs of sesame oil, 2 tbs of olive oil, 1 cut up spring onion or leek, 2 cloves of garlic, small piece of freshly grated ginger.


Trim all excess fat off the lamb and cut into small pieces. Marinate this in a dish along with the sherry, oils and soya sauce for about an hour. Heat some oil in a wok and stir fry the meat for about 3 minutes. add the the leeks and or spring onions followed by the ginger and garlic. Continue to stir fry for a further 3 or 4 minutes and serve with brown rice or noodles.

and for the lazzy ones like me, a great lamb recipe:


spread out two large aluminum foil crossing them so to prepare a crib.


lay the lamb leg on the foil.


squeeze a lemon on top of it. salt and pepper. and now the difficult part (lol):


fold the foil over the leg and seal it as tightly as possible (papillote in french)


stick it in the oven 200°C for 2 hours.


be carefull when you unwrap the foil as the hot steam air will blow into your face.


the lamb cooked that way is awsomelly tender.
