Tips to find a catering job in 5-stars hotels

my brother just graduated from an Italian school specialised in catering services. He did a couple of short traineeships in a 5 stars hotel and a famous restaurant in Milan and now his ambition is to get a job, temporary or fixed, a traineeship preferably, in a 4-5 stars hotel in Switzerland as pastry assistant. He already applied directly to the major hotels, and also sent his CV to some specialised recruitment agencies. I was just wondering if anyone of you has any experience in this kind of job research and can give him some precious advice. I know that networking is important, I work in a completely different field so I cannot help him much.
