If the weather is nice, I would recommand the Salève for its amazing view over Geneva Area and on the other side the view on the Mont-Blanc and other mountains
Now there's some place I like, like the papilorama, (full of butterflies) or some towns like Gruyère, Zurich, Lucerne, Saint-Gall. Just go on their websites to see if that could interest you.
Now it depends of what you mum likes.

On the french side I would also suggest Annecy for the lake and old town, Chamonix for the mountain atmosphere and if you like nature then Sixt Fer à Cheval for the beautiful waterfalls.

Bertrand and Hedi nailed my two favorites there, Gruyere, (old town, castle, cheese factory) and Annecy (Lake, old town and panorama)
Alternatively Lyon is driveable, in less than 2 hrs, if its big city shopping etc your after.

Yvoire - you can also get there by boat - more pleasant than car. For easy walking - the Jura (La Givrine or St Cergue) but depnds when she is coming. Also Lac de Taney. Thermal baths Lavey. Day train pass which you can get for 35 francs.

Most of my favorites have already been mentioned (Yvoire, Saleve, Gruyere, Lyon).
Let me just add Les Gorges du Pont du Diable, a nice bit of nature about 30 km from Geneva. The climb back up after you've seen it is a bit tough (I don't know how old/healthy your mum is).

If you chose this one check before you go. Not sure if it is open in winter. If you are into that sort of thing there are also the gorges de fier out ANNecy way
