Cooking spare-ribs, any experienced BBQ-chefs here?
Howdy!!



there are literally thousands of recipes on the web, but all involve having one of those large bbq widespread in the US but hardly usual here (yeah I know shame on us unreasonable, primitive euro-barbarians). Anyone succeeded in cooking spare-ribs on our midget-size bbqs?



hummy tips on best basting recipes are hungrily welcome :)

I like to pop them in a pan of boiling water and gently simmer for 30 mins before marinating when cool and then on the bbq to colour.  The meat just falls off the bone..... :)

From one of those barbaric Americans... (although I was born in Hungary and lived in Switzerland as a child...)



Put the ribs in the oven, with about 1.5 cm of water in the pan, cover them with aluminum foil and cook on high heat for about 30-45 minutes



Then use whatever marinade / spices you wish to use and place them on the grill for color and crispiness...



If you cook them on the grill the whole time, they will turn out like leather... (regardless of the size of the grill)



Enjoy!

And here is a good BBQ sauce recipe... Unfortunately it is not in metric measurements... Sorry...



2 cups ketchup

1 bulb garlic, peeled and crushed

1 cup water

2 tablespoons hot sauce

1/4 cup honey

2 tablespoons molasses

2 tablespoons brown sugar

1 teaspoon Worcestershire sauce

1 teaspoon soy sauce

1 teaspoon salt

2 tablespoons Cajun seasoning

1 pinch paprika

1 pinch crushed red pepper

1 pinch ground white pepper

1 pinch ground black pepper

2 tablespoons cornstarch

1 tablespoon water

1/2 cup butter



In a large saucepan over medium low heat, mix together ketchup, garlic, 1 cup of water, hot sauce, honey, molasses, brown sugar, Worcestershire sauce, soy sauce, salt, Cajun seasoning, paprika, red pepper, white pepper and black pepper. Allow the mixture to simmer approximately 30 minutes.

In a small bowl, dissolve cornstarch in 1 tablespoon of water. Adjust amount of water as needed to fully dissolve cornstarch. Stir into the sauce mixture. Continue simmering approximately 15 minutes.

Stir butter into the sauce mixture. Continue simmering mixture approximately 15 more minutes, or until butter is melted and the sauce has begun to thicken. Serve over meats prepared as desired
