Crispy Peking Duck with Pancakes?
Hi,

Please can someone recommend a nice Chinese Restaurant that serves Crispy Duck and Pancakes, that wont break the bank?  I've looked in city guide but couldn't find anything.

We live in between Morges and Lausanne.

 I had this problem in Australia, where there seems to be no restaurants that do crispy aromatic duck( as opposed to the inferior peking duck... though I guess we should call it Beijing duck these days)
The solution I found was to make it myself, and it is surprisingly easy. You can buy the pancakes at any Asian store. Obviously even Switzerland has the cucumber and spring onions. The plum sauce is very easy to make, and if you look on the internet there are plenty of duck recipes. Basically all you do is make a marinade( takes about 5 minutes), then marinade the duck overnight. Steam it for a few hours, and keep all the yummy fat for your roast potatoes, then stick it in the fridge till cool and dry. Then all you have to do when you need  to cook it is give it a quick fry......easy as....
