Hi there,


Just an idea for those who now have to cook at home and look for simple things to start with:


If I manage to upload and there's an interest, I'll share some of my favourites - not necessarily all healthy, but you can always add a salad-alibi.

We made Lamingtons this weekend, easy and delicious!


 


First make a sponge cake


- 4 eggs


- 1 cup sugar


- 1 teaspoon vanilla extract


- 1 1/3 cup flour


- 1 1/2 teaspoon baking powder


- 110g melted butter


1. Mix eggs, sugar, vanilla and butter until pale and thick


2. Sift and mix in flour and baking powder


3. Bake at 180C for 20-25 mins


4. Cool and cut into squares


Then make some chocolate sauce


- 75g butter


- 1 cup milk


- 1/2 cup cocoa powder


- 3 cups icing sugar (!)


1. Melt butter and add milk


2. Disolve in cocao


3. Disolve in sugar and cook a bit


Finally coat the sponge squares with chocolate and coconut, around 6 cups is needed. Prepare 2 dishes - one with the chocolate sauce and 1 with coconut.


Soak each square in sauce, then coat on all side in coconut. Place on a rack to dry and turn after 30 mins. Can be eaten immediately or put in the fridge.
