the one in tube? If it's that, it's called Lait Concentre' (concentrated milk) and you'll find it in most alimentaries shops

..at least that's what it's called in canada, and is not the same as condensed milk which is gooey and very sweet, which is probably what the stuff that comes in a tube is. evaporated milk is pourable like regular milk. if u want u can evaporate ur own milk like a chef. =) or else depending on whether u'r cooking with the stuff or just baking with it, u can probably substitute it with a mix of milk and cream. (with uht milk if u want the artificial taste. =D)

i was looking for the same thing. On Google, it told me it was lait concentrait sans sucre, or something like that. I saw the one in the tube, but suspect that that's condensed milk and not evaporated. i had no lucky, but did find a pumpkin pie recipe that called for whipping cream instead and it worked out great. How did you do?
