You can find English speaking instructors at every ski resort - not sure if necessary to book but you check at the office de tourisme at any ski resort. If you are a total beginner then you go to the resorts close to Geneva eg col de la Faucille or les Gets.
Why do you have to have individual instruction? Check out the international ski club of Geneva www,scig.ch - much cheaper and more fun
