Here are my two... both offer shade if you can get a seat. one for each side of the lake.
La Terrasse. (next to bain de paquis).
The Wake Centre next to Geneva Plage

Out of Geneva there are some great cafes on the waterside, such as at Genthod beach, or Mies plage, or at Celigny, or at Prangins, or even by the Chinese embassy after the UN Beach.

Le restaurant des Halles de l'Ile is not bad either, as you're surrounded by water.
La Terasse Paradis, Quai Turettini, is pretty cool, with deck chairs and a relax atmosphere.
