Hello Andrea,
I'm not sure what type of collard greens are typical for Colombian cuisine, but you may try the variety "couve-galega" you should find in (at least most of) the Portuguese groceries in Geneva as this is the main ingredient for the awesome Portuguese "caldo verde".

In my garden I have like tons of collard greens. It the end of the season and I just cant eat all of them. And collard greens I have is cote du Bete, or Chard. Not swiss chard but the White chard you can cook them and then put them wiht onions, cream, cover with cheese and put in oven, like Gratin pomme du terre.

Stephanie thank you so much!!!! I think that type of green will work fine.... what I do is cook it with chicken stock and then mix it with pinto beans, along yucca, green plantain and a puree of coriander, carrots and tomatoes!!!

So on Wednesday I picked 4 kilos of the '100% organic chard/collard greens' from my garden.
The two people who requested, just didnt bother to reply back, even though I sent a second note, quote 'lets make a time and place so I can get them to you fresh'. Yeah I was doing this for free and charging nothing as I preferred people to use my chard before it goes bad due to the quickly change in teh weather. Well I still used some but composted most. I still have about 8 kilos or 8 plants left, but they are not looking as 'happy as last week'. So if anyone is really serious about my'100% organic chard/collard greens', let me know because im sure they will be frozen by weeks end.
This week I just picked the last of my green peppers, Habano peppers, and 3 kilo of green beans, agian '100% organic'.
I might have another 1 kilos of green beans next week, depends if I get enought sun.
