Well, kefir grain is a type of mushroom that, if mixed with milk produces the natural kefir. You can also mix it with water, sugar, lemon and dry figs wich makes an excellent sparkling refreshing beverage.
The thing is that this is the best natural probiotic. And it contains much more than the probiotics that you can usually buy at the pharmacies and the health food stores (as pills).
Quote:
* 1 capsule of man-made probiotics contains about 15 billion bacteria.
* 1 bowl of fresh yogurt (500 ml), contains about 1.5 trillion beneficial organisms.
* And 1 small bowl of fresh kefir (500 ml), contains as many as 5 trillion beneficial organisms.
Almost 400 times more than a capsule.
You can find out more here.

foxyu I have, but I am in Lausanne.
Hi Ana,
Thanks for letting me know.
Do you have any idea if you can send the kefir grains in the post? If this is possible, then I could reimburse you for the postage?
I don't normally go to Lausanne, so I may need to ask around if anyone can perhaps collect them from you. Do you ever come into Geneva, if so next time you come please let me know then I can meet you somewhere to collect them?
Thanks again,
Ursula

Milk kefir is really supposed to be white/cream. Other colors, even if in small spots, means they got contaminated by fungos, etc. In that case, it's defenitely better to throw them way. That's why you should always keep a small part of it frozen (without milk).
As long as you keep changing the milk, they'll grow non stop. The maximun of days for fermentation depends on the temperature, proportion, etc. It's usually one day the indicated, but you've gotta pay attention to the sings - google it and you'll find photos and better tips for that. And if you don't have time to change every one or two days, just put on the fridge, it will desacelerate the process (i've lefted for almost two weeks once, but couldn't use that milk).

Hi there,
you might guess that already, but: I am also super interested in water kefir and kombucha SCOBYs. Ewa, I already texted you, but are there possibly other people around who have some working cultures and who could provide a bit of material plus advice?
I had a kombucha years ago and it was quite easy, but I could use a little refresh on the matter. Anyone up for coffee/tea (on me) and donation of SCOBY and advice?
Cheers,
Laura
