I've been in the south part of Tuscany, near to Siena ...I think is the best part of Tuscany to visit.
I can suggest you to take a B&B in San Gimignano .. I have been to the "poderi arcangelo" but I think all the B&B or Country House are pretty much good there. Something to do is to visit the region of Brunello di Montalcino, Montepulciano etc... all in the nearbies ...kind of wine tasting tour.

Friends of mine stayed at Bolsinina south of Siena... and loved it!
You might try calling the tourist office in one of the larger towns. About 5-6 years ago I was able to get a guide from the tourist office of all agriturismo in the region. I probably still have it, but it would be very out of date. It was a great resource - in the morning we called around to find out where there was a room available and then we headed in that direction.

I agree with Massimiliano: all the places i've stayed in in the countryside Toscany were great. We once simply drove out of Florence and just stopped in a little town somewhere close to Abbacia di Monte Oliveto Maggiore and asked the local tourist office for a recommendation on the spot. Then few years ago I took my family for a week in Toscany and we stayed in Agroturismo Savernano 15-20 min drive from Florence http://www.agriturismosavernano.com/ We all loved it. And if you go there - try their home-made dinners at least on a few nights! I have to say that the whole region is marvellous. but my favorite is this tiny town called Bagno Vignoni somewhere halfway between Sienna and Montepulciano, which has a hot-spings pool for its main square and is really charming http://www.bagnovignoni.it/. But pretty much anywhere you go is lovely so you will enjoy your trip no matter where you stay.
