Would anyone recommend one town over another in the Amalfi Coast to use as a home base to explore this area? I'd like someplace a little less touristy, relaxed, good for hiking. And if you have any suggestions for places you would recommend to stay I would very much appreciate.

The Amalfi coast in Italy is one of the most beautiful places I know of. Certainly up there in terms of the kind of place which should be seen at least once in each keen traveller's lifetime. Can understand why it is popular with tourists and to be honest I simply do not know the place well enough to be much of a guide.
All I can say is that if you are heading there for a special occasion then the Hotel Caruso (in Ravello) is a stunning place for a drink or a lunch. Not stayed there myself simply due to budget. In terms of location it can all sound a bit fairytale....perched on top of a 350m cliff with near vertical views down to the sea. Clientele seemed to comprise a selection of elegant Italian and International guests, so does not feel touristy in the conventional sense.
From what I hear almost anywhere along the Amalfi Coast is nice and I hope you have a good trip. Best wishes, Phil.
P.s. a day trip to the beautiful island of Capri can also make for a nice day out while in the area.

We went there last year. We stayed in Positano. It a nice small place to relax for a couple of days. From there you can either take the car, bus or boat to visit the other cities.
The hotel we stayed was Villa Gabrisa. Its a nice hotel on the top of Positano. I liked it. I booked it over: http://www.booking.com/
If you intent to visit Capri, stay a least over night. You may want to take the bus to Anacapri south-west of the island and walk on the cliffs. Its beautiful.

I visited Positano(per suggested), Praiano, Ravello(per suggested), Sorrento, AnaCapri, Amalfi. The end of April was a perfect time before the true tourist season started and but still warm enough to lay around on the beach. One thing I would recommend is that if you don't have a car or scooter, recommend staying in one of the larger towns, Amalfi, Minori, Positano..the $1 euro buses stopped running to Praiano at 10:30pm every night..and I ended up taking a $25euro cab for a distance of 10k or hitchhiking between villages when I missed the bus.
