Hi,
I have been in Eilat during November. It is not too cold, usually the right temperature, but you will need a pullover for the eve :-)
If I were you, I'd just worry about the political stability and situation at the moment so an insurance in case of a withdrawl is adviseable.

And just in case, you are a frequent business traveller: some arabian countries refuse to let you travel to their country if you have an Israeli stamp in your passport (e. g.: could be a prob if you go to Dubai). So you should also consider this. Besides all the safety - issues &co Israel is amazing interesting and has a nice coast :-)
