The University of Geneva offers Summer intensive French courses. I did the full 9 weeks this Summer and it was fantastic.

It's not in summer but a friend of mine is just starting a French / English school which combines a week of skiing/being in the mountains with intensive language courses.  www.skinglish.com is the website.

Best seasonal greetings,

R.
